Non-allergic food histaminosis is the loss of health due to a moderate intake of one or more
foods in good health, capable of causing the release of endogenous histamine by a non-allergic
immune mechanism. It is an acquired disease for which there are no genetic markers.

The cause is a deficiency of the enzyme DAO located in the liver. Histamine ingested in food
(exogenous) enters the systemic circulation. When it reaches the kidney, it cannot be
degraded and therefore cannot be reabsorbed in the proximal tubule.

Treatment consists of:
1. Reduce the intake of foods high in histamine (canned and semi-canned fish, matured
and fermented cheeses, some vegetables, red fruits, uncooked sausages, wine and
beer).
2. Supplementation with the enzyme Diamino Oxidase (DAO) for its correct degradation.

The symptoms of this disease can be classified into two types:
A. Direct: migraines, headaches, abdominal swelling after eating, diarrhea, muscle
cramps, deregulation of secretions (saliva, tears, vaginal discharge), abortions and
infertility…
B. Indirect: intervertebral dehydration, pressure pain, dry skin, constipation…
